PICKLED VEGETABLES IN VINEGAR

PICKLED VEGETABLES IN VINEGAR 



A very simple method. All you need is your chopped fresh vegetables some sugar, salt, citric acid and vinegar. 

I have taken about 2 Cups of each:
Carrots 
Turnips 
Cucumbers 
Cauliflower 
Capsicum 
1 Cup Beetroot (to avoid too much colour)
5 pieces of Garlic Cloves (slit)
Few Green Chillies (stalks removed)


For the above quantity of vegetables I added:

3 Tablespoons Sugar 
1 Tablespoon Salt
3 Cups White Vinegar 
1/2 Teaspoon Citric Acid 
Some Hot water 

Add everything to the vegetables. Stir to combine everything well. Place the mixture into a Jar. Leave just about 2 to 3 inches space in the jar. Shown below. 


Add hot water now to fill up that space. 
Seal with lid and invert the jar just twice. 
The process complete. You can consume immediately but the taste and quality improves as days pass.
