CHOCOLATE COLD CAKE
Here is a relatively easy to follow recipe with absolutely delicious results. It has children and adults clamouring for more. Here is what you need to prepare this chocolate delight.
INGREDIENTS
175g (6 oz) Butter
2 Eggs
9 Tbsp Sugar
6 Heaped Tbsps Milk Powder
2 Tbsp Chocolate or Cocoa Powder
2 Small Packets of Marie Biscuits (You can use more or less)
1 or 2 tsp Vanilla Essence
A few chopped Almonds (Optional)
A Little Dessicated Coconut (Optional)
DIRECTIONS
Break the biscuits into quarters and set aside
Place the butter, sugar, chocolate/cocoa powder, milk powder and eggs into a pan ( I made double quantity so you can see 4 eggs instead of one in this pic). You need a double boiler for the next step of cooking but if you don't have one, don't worry, just place this pan in another slightly larger one, filled with water. Place the larger pan on heat and once the water boils, place the smaller pan with all ingredients in this water.
Take a firm grip on the handle of the pan, wear your mitten if necessary and with a spatula, start stirring the ingredients continuously until the butter melts and all the ingredients combine well. Continue stirring until the whole mixture thickens well. This should take around 15 to 20 minutes.
Once the mixture has thickened, remove the pan from the heated water and tip in the biscuits you set aside earlier. Give it a quick stir to coat the biscuits well and to distribute them evenly in the chocolate mix. Add the vanilla essence.
Pour the chocolate mixture into the plastic bag and shake it down well to fill the bottom of the bag as evenly as possible
Holding the bag from the filled side, mould the chocolate mixture into a log and then firmly roll it up as shown in the picture. Let it cool to room temperature and then place in the freezer for a few hours or until firm. Best to leave it overnight.
Once firm, remove from the bag and place on a flat surface. You can roll the chocolate log in some chopped almonds and/or dessicated coconut if you so desire. With a sharp knife, cut into slices. The thickness of each slice is entirely your choice.
