COOKIES
INGREDIENTS
300g Unsalted Butter
1 Cup Powdered Sugar
1/4 tsp Salt
1 Tbsp Vanilla Essence
2 Large Egg Yolks
3 and 3/4 Cups All Purpose Flour
1/2 Level tsp Baking Powder
METHOD
1) Using an electric mixer, cream together the butter and sugar until light and fluffy. Add egg yolks, flour, salt and vanilla and mix until well combined.
2) Fit the cookie press with a disc of your choice and fill it with the dough. Press out the shapes on your baking trays and chill the cookie shapes in the refrigerator to chill for about 30 minutes.
3) Preheat oven to 350F (170C) degrees. Bake until cookies are lightly browned, that should be in about 7 to 10 minutes. Transfer to a wire rack to cool.
4) Dip cookies in glaze and decorate with sanding sugar or any other decorations you prefer. Cookies can be stored between layers of parchment, up to 1 week at room temperature, in airtight containers.
