WATERMELON JUICE

WATERMELON JUICE

Come summer and nothing better than a chilled glass (or more) of chilled watermelon juice. Lemonade is good too. But for now, we have watermelon juice to talk about. It is the simplest thing to make and there is no extra sweetener added. Very refreshing indeed. SO what you need is as follows....

1) A good ripe watermelon. Cut out the chunks from the watermelon remove the seeds and drop them into the blending jug. Pulse a few times until the fruit is all mushy. Strain the fruit pulp into another vessel.

2) Add a dash of salt and a twist of black pepper. Taste and see if it requires more. Squeeze in some lime juice if you so desire. You can also throw in some mint leaves to crush with the watermelon before pulsing. Or you can chop finely and add into the juice later.

3) Serve chilled.

Here is a slight variation. You can add some mango pulp to create a very delightful combination and a refreshing taste.

Here is how to prepare it.

After you have prepared the watermelon juice, scoop out some mango flesh and drop into the blending jug. Add just enough water for the motor to run smoothly. You must have a thick pulpy mush. Pour this a quarter way up into a tall glass. Pour the watermelon juice over this. Do not stir.

Make sure it is chilled well before you serve. ENJOY!
