MANGO OREO DELIGHT

MANGO OREO DELIGHT

This is a very refreshing dessert that needs no cooking. All you need is your pureed fruit, Oreo biscuits, cream and some condensed milk and you whip up a very lovely dessert. Here are the ingredients you need:

INGREDIENTS FOR THE BASE OR CRUST
  • Crushed Oreo Cookies - 2 Cups
  • 4 Oz Melted Butter
DIRECTIONS

Pour the butter into the crushed oreo. Mix well and press to pack firmly into your serving glass dish. Place in the refrigerator to chill for a minimum of 30 minutes

INGREDIENTS FOR FILLING

  • 2 Large Ripe Mangoes (NOTE: You can substitute mango with any fruit of your choice...strawberries, peaches, apricots, pears - tinned or fresh)
  • 1 Tin of Condensed Milk - 390 Grams
  • 2 Heaped Tablespoons Gelatin
  • 200 to 300 Grams Fresh Cream
  • Some Grated Chocolate or Chocolate Chips (For Garnishing)
DIRECTIONS

1) Puree the mango using a hand blender or a regular blender. Save half a mango to cut into cubes for garnishing later.

2) Dissolve gelatin in about a quarter cup of water. Do not use boiling water as this will render the gelatin ineffective.

In a large mixing bowl, pour the mango puree, add the dissolved gelatin, condensed milk and half the quantity of cream

Whisk all these up to form a smooth creamy mixture

Pour this mixture over the chilled oreo base

Spread it out evenly. Place the dish back into the refrigerator to set. Best to leave it at least for an hour. You can prepare up to this stage and leave in the fridge until just before ready to serve to complete the topmost layer.

Once set, swirl or spread out the rest of the cream over the mango oreo base. Place the mango dices over however you want and sprinkle some grated chocolate or chocolate chips over. I also used some glace cherries for adding colour.

SERVED AND READY TO EAT - ENJOY!!
