- 1 1/2 cups water
- 3/4 cup sugar
- 3/4 tsp citric acid
- 2/3 cup freshly-squeezed lime juice (about 5 large limes)
- Rind of 3 limes cut into pieces (Rind ONLY. Avoid the white part completely. It gives bitterness)
- 3 Tablespoons corn syrup
- OPTIONAL: few drops of Green Food Colour
- PREPARATION
- 1. Stir citric acid and sugar together.
- 2. Separately, bring water to a boil then add the sugar mixture.
- 3. Stir constantly until the sugar is fully dissolved.
- 4. Turn off the heat and add lime juice and rind (and colour if using) and stir well.
- 5. Add the corn syrup
- 6. Turn the heat back on and allow to simmer for 1-2 minutes.
7. Remove from heat, cover and allow to cool
