POTATO WEDGES 



POTATO WEDGES 

The recipe is very simple. In fact it's something my daughter came up with. And I'd like to share it with you all. So here goes: 

INGREDIENTS 

Few Potatoes - cut into wedges 
1 Cup Plain Flour 
1/4 Cup Rice Flour 
1/2 Teaspoon Chilli powder 
Some Lime juice 
Salt to taste 
Water to mix 
Some Plain Flour for dredging 
Oil to Fry 

PREPARATION 

Peel the potatoes, cut into little wedges and boil in some water until just done. Drain and set aside. 

Next, in a bowl, add 1 cup plain flour and 1/4 cup rice flour. Add salt and red chilli powder to taste. Some lime/lemon juice. Add water a little at a time to form a thick batter. Now dredge the drained potato wedges with some flour. Shake off excess. Dip in batter to coat and fry in oil on medium heat until crisp. Serve with ketchup or chutney or dip of your choice.
