CHICKEN PIE WITH BREADCRUMBS



This is a chicken pie with a difference as it does not require any pastry. It turns out to be cheesy, creamy, oniony and topped with a nice thick layer of browned and crisp breadcrumbs. But like all pies, its crust turns out to be flaky, buttery and perfect. Give it a try if you want to try something different.


INGREDIENTS
300 grams Boneless Chicken - boiled and shredded or chopped
Corn Kernels - One and a half Cup
Spring Onions/Scallion - One and a half Cup
Salt to Taste
Black Pepper - to taste
2 Teaspoons Crushed Chicken Stock (or powder)
1 Egg
2 Capsicum - chopped
1/2 Carrots - chopped 
Butter - 4 Tbsp
Milk - 2 Cups
Breadcrumbs - 1 Cup
Grated Cheese (Parmesan/Mozarella)
2/3 Boiled and mashed potatoes (ENTIRELY OPTIONAL) - I used it 
3 Tbsp Butter - Melted


PREPARATION


1) To prepare the sauce, in a bowl, take the milk, add 2 Tbsp butter, egg, a little salt and black pepper. Whisk until creamy and frothy. Set aside. IF using the potatoes - mix this sauce thoroughly in the mashed potatoes. 


2) In another a frying pan, add the remaining 2 Tbsp of butter, heat a little to melt and add the corn kernels, capsicum and scallions and carrots and fry for a few minutes. Add the shredded chicken. Add stock powder.   Stir well. Taste and adjust salt. Take off the heat and set aside


3) Take your pie dish and place a quantity of the prepared sauce with potato. Add the chicken and veggies and spread out evenly. Next, sprinkle a layer of cheese and lastly spread out more of the prepared sauce (or potato mixture) evenly over these layers.







4) Repeat the layering process as described in step 3 above. Finally, spread out the breadcrumbs evenly and drizzle the 3 Tbsps of butter over the crumbs.




5) Bake the pie in a pre-heated oven at 180 deg C, for about 10 minutes or until the top layer is evenly browned. Remove from oven and let it sit until reasonably warm before serving. If served while too hot, chances are that it will crumble.


NOTE: You can adjust the vegetables and cheese quantities according to your preference.
