FALOODA

FALOODA







Refreshing, delicious, creamy and irresistible. It is a traditional Pakistani/Indian drink that is very popular in summer. A favourite with all...young and old. It can be considered a drink or a dessert. Either way, it is definitely a must-try.

INGREDIENTS FOR 4 GLASSES

1 Litre Fresh Milk 
A Few Tbsps Rose Syrup
3 Cardamom Pods
2 Tbsps Tukh Malang or Tuk Maria (Basil Seeds)
Prepared Jelly - In 1 or more Flavours (or prepared Agar-Agar in different colours)
Some Crushed Blanched and Crushed Almonds
Some Crushed Pistachio
1 Package of Falooda Sev (These are cornflour noodles especially for this drink. If not available, then substitute Rice Noodles or Unflavoured Egg Noodles)
4 Large Scoops Vanilla Ice Cream
Some Crushed Ice

METHOD

1)  Pour the milk in a saucepan, toss in the cardamom pods and once it comes to the boil, reduce heat to simmer for about 10 minutes in order to reduce the milk. Remove from heat, let it cool a bit and then pop into the refrigerator to chill. It has to be well chilled before use.

2)  Prepare the jelly. You can use strawberry flavour and/or Lime or Banana flavours. If using agar-agar, prepare that, pour in different containers and add a drop of different colour in each. The idea is to get a colourful presentation. You may just use one flavour - depends on your choice. Leave aside to set and chill.  Once chilled cut the jelly/agar-agar up into little cubes.

3)  Boil some water and add the noodles to cook. Once cooked, pour through a strainer and rinse through. Place in refrigerator to chill

4)  Soak the basil seeds in about 2 cups of water and set aside. They have to soak for at least an hour after which they will have plumped up. Strain away the water once they have plumped up and set aside.

5) Once the milk has chilled well, discard the cardamom pods and add a few tablespoonfuls of rose syrup. Taste the milk and add more rose syrup to suit the amount of sweetness you require.

ASSEMBLING 

1)  In your glasses (tall glasses are recommended), tip in some of the noodles.

2)  Add a generous scoop of ice cream.

3) Add some crushed ice.

4)  Add a tablespoonful of the basil seeds.

5)  Pour just a little bit of the milk.

6) Add some jelly/agar-agar cubes.

7)  Add some more milk.

8) Top off with crushed nuts, some more of the jelly/agar-agar cubes and a little of the basil seeds.

Hi Shamaji,I was just peeping through you blog when I noticed you have a lot of delicacies to share Mash'Allah.I have a question by the way,actually I've tried making felooda many times as it is one of my favourite beverage but would end up messing with the Tukh Malang thing as it really kinda becomes sticky when imbibe water and is difficult to separate. You have any tricks for it as yours is looking extremely beautiful ;)

    1. Zoha Umar - I am so sorry I didnt see your message earlier. You dont need to separate the seeds. After they have plumped up after soaking, just pour the whole lot into a strainer to drain away the water. They will be in sort of clumpy form. Just scoop up some with a tablespoon and use as required.
