BEEF OR MUTTON CURRY
This is a curry that is very easy to make and especially so for beginners in cooking. It turns out very delicious and goes well with any kind of bread. Rice lovers can have it with rice.
INGREDIENTS
1 Kilo or 1lb Beef or Mutton - Cut into cubes or bite sized pieces
1/2 Cup Oil
3 Medium Sized Onions (Sliced)
2 Medium Sized Tomatoes
1 Heaped Tbsp of Ginger and Garlic Paste
1 tsp Chilli Powder (or to taste - increase or decrease)
1 tsp Turmeric Powder
1 Tbsp Coriander and Cumin Seed Powder
1 tsp Salt or to taste
1 tsp Garam Masala Powder
FOR GARNISH
Some ginger julienne
A Few Slit Green Chillies
A little chopped Cilantro
METHOD
1) Place the pressure cooker on high heat. Or you can use a deep heavy based cooking pot. Pressure cooker is preferable though as it saves a lot of time. Add the oil and wait for it to heat then add the ginger and garlic paste. Stir for about 30 seconds.
2) Add the meat and salt. Stir fry until the meat changes colour. Add the onions, tomatoes, chilli powder, cumin and coriander seed powder and 2 cups of water (if using a pressure cooker). If not using a pressure cooker then add 3 cups of water.
3) Cover the lid and let cook on moderate to low heat for 15 - 20 minutes. If not using a pressure cooker, then let it come to the boil, and cover with lid and let simmer for 40 - 45 minutes. Add more water if necessary and cook until meat is tender. Then stir fry until oil separates.
4) For those using a pressure cooker. Let the steam settle, uncover and stir fry until oil separates. Please note that if you want to increase the gravy then add some water after you are done stir frying.
5) Check seasoning. Sprinkle Garam Masala Powder, stir and serve immediately garnishing with slit green chillies, chopped cilantro and ginger julienne.
