GARLIC FRIED RICE
This rice is ridiculously easy to make. You can even use leftover rice and you have a fresh dish of rice to serve.
INGREDIENTS
2 Cups of boiled Rice - Cooled to Room Temperature and grains separated.
4 to 5 Cloves of Chopped Garlic
1 Bunch of Chopped Spring Onion (or you can use the regular onion)
2 or 3 Tablespoons Oil
2 Tablespoons Soya Sauce (OPTIONAL)
1 Tablespoon Vinegar (OPTIONAL)
Salt to taste
DIRECTIONS.
In a large pan, pour the oil and toss in the garlic. Saute on medium heat until they change colour. Take care not to brown too much or less it will give the rice a bitter taste. So watch over carefully at this stage.
Once the Garlic is done, toss in the spring onions. Saute for 1 minute and add the rice. Add the soya sauce, salt and vinegar and toss well with spatula to combine well. Taste for salt and add more if necessary. Do not add too much salt to start with as the soya sauce already has a high content of salt.
Lower the heat to very slow, cover the pan and let it simmer for a few minutes to heat the rice well through. You will have to check at least once to stir rice again to avoid grains sticking to pan.
Serve hot garnished with a little bit of spring onions, cilantro or mint.
