BANANA DUMPLINGS

                  BANANA DUMPLINGS

A little twist to bananas - Especially those almost over ripening. Just throw a few ingredients together and there you have a lovely snack all ready to be gobbled up!

BANANA DUMPLINGS

INGREDIENTS

• 2 Cups Plain Flour
• 1 Teaspoon Instant Yeast
• 1/2 Teaspoon Cardamom Powder
• Pinch of Salt
• Pinch of Soda Bi-Carbonate
• 1/2 Teaspoon Vanilla
• 1 Tablespoon Oil
• 2 Bananas Finely Chopped
• Some Warm Water for Mixing

DIRECTIONS

1) Sieve the flour and place in a mixing bowl. Add all ingredients to it except the bananas.

2) Start adding water a little at a time while mixing the flour with your hand. Keep adding water until you get a smooth batter of dropping consistency.

3) Cover with plastic wrap and set aside for rising.

4) Once risen to double it's size, beat it down. Add the bananas and mix well. Pour some oil in a wok and place on heat

5) Once the oil is moderately hot, start dropping in the dumplings with your hand, using your fingers to drop a small lump of batter at a time. If you feel you can manage with a spoon, do go ahead and drop the dumplings in oil using a spoon.

6) Keep turning and moving the dumplings using a wooden spatula until golden brown. Remove from oil with a slotted spoon and transfer to a plate lined with absorbent paper. Fry another batch in the same manner until you finish the batter. Transfer all into serving dish and drizzle syrup all over them. Serve warm.

INGREDIENTS FOR SYRUP

1/2 Cup Sugar
1 Cup Water
Banana Essence (Optional)

DIRECTIONS

Place the water and sugar in a small pan and place on heat. Reduce heat once it starts boiling. Simmer this syrup until just beginning to get sticky. You have to watch over it because it readies in minutes. So if you move away, chances are that syrup will over cook or burn. Cool the syrup and set aside. Add the banana essence if using. Drizzle over the dumplings just before serving.

BON APETIT!
