MOZZARELLA STICKS

INGREDIENTS
1 Block Mozarella Cheese (8 oz)
1/4 Cup Flour
2 eggs
2 Tbsp Water or Milk
2 cups Seasoned Breadcrumbs
DIRECTIONS
Place the block of cheese onto the cutting board and cut into half. Then standing each half on edge cut into half again. Now cut each piece of cheese into 5 equal sections lengthwise. Each cheese stick should be approximately 1/4" × 1/4" ×3"
1 block of cheese should make 20 sticks
1) Toss the cheese sticks in flour and shake well to remove excess.

2) Whisk eggs with water/milk and coat the sticks in the mixture

3) In another plate or bowl, add breadcrumbs and coat the cheese sticks. Shake off excess crumbs and set aside.
4) Repeat the breading process by dipping in egg mixture followed by the bread crumbs.

5) Place onto a plate and freeze for at least 2 hours. This step is very important as later it'll help for the cheese to not leak out in the oil while frying. 

6) Heat oil. It has to be quite hot. If oil not hot enough the cheese will leak out. Fry the cheese sticks in small batches until golden brown. It should take less than a minute.

7) Remove to a plate lined with absorbent paper. 
Serve while still hot. Enjoy!

SEASONED BREADCRUMBS

INGREDIENTS
6 Slices Plain White Bread. Best if Stale
1 Tablespoon Italian Herbs or Seasoning
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
1/2 Teaspoon Salt
DIRECTIONS
Place all ingredients into a food processor and pulse a few times until the bread is finely crumbed. 
Place the breadcrumbs onto a baking tray and spread out evenly. Place tray into pre-heated oven at 150C/300F. Heat for 3 minutes. Remove from oven, stir and return to heat for 3 more minutes. Cool the breadcrumbs and store in an airtight container. It will stay good for use for at least a month.
