CHICKEN STEAK
Ingredients
· 1) Chicken breast piece (boneless) – 1lb/1 Kilo
· 2) Tomato ketchup 1/4 cup
· 3) Worcestershire sauce 4 tbsp
· 4) Lemon juice 2 tbsp
· 5) Mustard paste 1 tbsp
· 6) Crushed peppercorns 1 tsp
· 7) Cinnamon powder 1/4 tsp
· 8) Salt to taste
· 9) Garlic cloves 4 (finely chopped)
· 10) 2 Onions (thickly sliced)
· 11) Baby potatoes – a few
· 12) Oil 1/4 cup
METHOD
1. With a fork, prick holes in the chicken breast pieces
2. Marinate chicken with tomato ketchup, Worcestershire sauce, lemon juice, mustard paste, black pepper corn, cinnamon powder, chopped garlic and salt and set aside for at least an hour.
3. Bake baby potatoes in oven.
4. Heat oil in a grill pan.
5. To cook marinated chicken, just lift chicken out of the marinade and place on the grill pan.
6. Pour remaining marinade over the chicken steaks, grill till tender.
7. Lastly grill sliced onion in the same pan.
8. Serve chicken steak hot with baked potatoes and grilled onion.
NOTE: You can grill the chicken steaks on a charcoal grill. Make sure that the coals are smouldering, but a little white with ash. If the coals are burning red, you might brown the steaks too quickly and it will end up under-cooked.
SERVING SUGGESTIONS: You can skip the baked potatoes and/or onions and serve with coleslaw and french fries, or with a salad and some pita bread with hummus.
