VIAZI VYA UROJO (POTATOES IN TAMARIND SAUCE)


VIAZI VYA UROJO (POTATOES IN TAMARIND SAUCE)


This is a very popular dish prepared in Mombasa using very simple ingredients. It can be served as it is or with some additions of savoury tidbits and coconut chutney.

INGREDIENTS

  • 6 Large Potatoes boiled with skin on
  • 1 tsp Nigella seeds (also known as onions seeds)
  • 3 Cloves of Garlic, finely chopped
  • 1 Small Sized Onion, finely chopped
  • 150 gms of Tamarind. Soaked in warm water, strained and diluted with 2 cups of water.
  • 2 tsp Chilli Powder
  • Approximately 3 Tbsps of Cornflour - stirred in a cup of water
  • A few drops of red food colour or a little food colour in powdered form
  • Salt to Taste
  • 5 Tbsps of cooking oil
METHOD

1) Skin the boiled potatoes once they are cool. Dice them into large chunks and set aside.

2) Place your pan on heat and pour in the oil. Before it heats up too much, tip in the garlic, saute for about 30 seconds and add the onions. Saute for about a minute or until the onions are transclucent.

3) Add the nigella seeds and pour in the prepared tamarind water. Add the food colour and chilli powder and tip in the potato chunks. Add salt and let it come to the boil. Boil for 5 minutes

4)  Take the pan off heat. Pour in the cornflour dissolved in water. Stir well and place the pan back on the heat. Boil for another few minutes until it has thickened, but still of pouring consistency. Check seasoning and add salt, chilli powder and tamarind if required.

5) Serve hot as it is, or add potato crisps/cassava crisps, coconut chutney, sev of  your choice and any other savoury crunchies of your choice. ENJOY!!
