MASALA CHIPS 



MASALA CHIPS 

INGREDIENTS 

1) Medium sized onion - chopped into fine dices (as we do for omelette)
2) 1 level Teaspoon Turmeric Powder 
3) 1 level Teaspoon Chilli Powder (Reduce or Increase as you desire)
4) 1 level Teaspoon Cumin Powder 
5) 1 level Teaspoon Coriander Powder 
6) 2 Garlic Cloves, 1 inch Fresh Ginger, 2 Green Chillies - crush these to a paste 
7) 2 Medium Sized Tomatoes - Chopped 
8) 1 Tablespoon Tomato Paste 
9) 2 Chicken or Beef Cubes - crushed up with fingers. 
10) Salt to Taste 
11) Lime Juice - according to taste 
12) Chopped Cilantro 
12) 3 to 4 Tablespoons oil 
READY FRIED CHIPS 

PROCESS 

1) Place the oil in a medium sized pan. Turn on the heat and add the onions. Sauté until just translucent. 

2) Add the ginger/garlic/chilli paste. Stir for about a minute. Lower the heat. Add the spice powders. Stir for 30 seconds and add the tomatoes along with the tomato paste. Add 1/2 cup of water. Cover and let simmer for a few minutes on low heat. 

3) Uncover pan and increase heat. Using your spatula, start stirring and breaking down the tomatoes until they become mushy and you see oil beginning to separate. Add the crushed up Chicken or Beef Cubes. Stir well. Lower flame. Toss in your ready fried chips. Gently mix around so they are all coated evenly with the sauce. Add salt according to taste. Add the lime juice as much or as little as you want - or none at all. Stir. Add the chopped cilantro just before serving.
