STIR FRIED LIVER (KALEJI)



 STIR FRIED KALEJI (LIVER) 

Liver is always tricky to cook to perfection. But here goes the recipe for those who are going to be brave enough to try. 

1) Marinate liver pieces in a little bit of yoghurt, lime/lemon juice, salt, ginger and garlic paste, chilli powder, turmeric powder, coriander powder and cumin powder. Leave to marinate for at least 30 minutes. 

2) Heat a bit of oil in a wide shallow pan. Toss in a few peppercorn, and a bit of cumin seeds and tip in the liver along with the marinade. Make sure the heat is very high. Keep stirring on and off until most of the water evaporates and oil starts to separate. Try not to cook liver for more than 10 minutes. The longer liver is cooked the more it will toughen. 

3) Squeeze in the juice of 1 or 2 limes. Give it a good stir, garnish with slit green chillies and cilantro and serve hot with Roti or any kind of bread you prefer. If you have any questions - please feel free to ask.

There are many complaints about that certain smell that emanates from liver. To get rid of that smell - just do this:

Before you wash the cut up liver, roughly crush a few Cloves of garlic. Mix these in the liver and set aside for about an hour. Then remove the garlic and wash the liver well. There won't be any repelling smell.
